The Perfect Queso
Another big thing people tend to miss out on when going vegan is a good serving of chips and queso. I am sure you have looked at many many recipes and just cant find one that works. Well, I am giving you a few tips on how to do your own. Start with a base. Do you want a cashew base, coconut cream base, potato base, or milk base. Once you have decided, next you must decide your filler. This can be many things depending on your base. You could go with carrots, cauliflower, sweet potatoes, dairy-free cheese, jicama, etc. etc.. The list goes on and on. Once you have these main two figured out, add in your nutritional yeast, herbs and spices, a bit of nondairy milk and blend away. Of course you want to cook each of the items before blending, duh. I have found the best combination to be potato and carrots. I also believe cashew bases are very good. It is all dependent on what you want to achieve. The potato base gives a gooey texture while a cashew base gives a creamier texture. Now I know you want a perfect queso, but what about an easy queso? When I am feeling lazy, I will take an unsweetened, unflavored nondairy milk and add shredded dairy-free cheese with a touch of vegan butter and nutritional yeast. Combine everything on the stove and stir until well blended. Easy and cheesy.
